Vegetarian Spring Rolls

½ onion
1 carrot
1 potato
2 mushrooms
1 clove garlic, minced
2 tablespoon soy sauce
olive oil
rice paper wrappers
hot water
1. Finely chop the vegetables and mushrooms.
2. Cook the vegetables and mushrooms with garlic and soy sauce
in oil 10 minutes over medium heat. Let cool before rolling the spring rolls.
3. Take a sheet of rice paper and soak it in warm water on both sides. Place it on a cloth for a few seconds to dry.
Place the sheet on a flat surface. Put the stuffing on the edge and roll half way. Fold in sides and continue rolling.
5. Heat oil for frying and cook the rolls until they are golden in colour.
6. Serve with soy sauce.
