Creamy Cauliflower Salad

1 cauliflower head cut into small pieces
1/2 red onion cut into small cubes
2-3 carrots sliced
fresh basil leaves chopped
3/4 cup vegenaise
2-3 tbsp of olive oil
3-4 tbsp of mustard
salt to taste
1. Put the cauliflower, carrots and red onion in a bowl.
2. In a separate bowl, add the vegenaise, olive oil, mustard, basil and salt and whisk together. For a thicker and creamier dressing reduce the amount of olive oil.
3. Pour the dressing over the vegetables and mix all together.
